Apple Grilled Cheese Sandwiches

Makes 4 sandwiches

Everybody, young and old alike, will love these sandwiches. Serve with or without the bacon, but do be sure to use a bread that will be really crispy. We especially prefer sourdough. The crispy sweet apple with the melted salty cheese oozing with the sweetened stone ground mustard just must be tucked inside a good bite of crunch. And hey, you can even do these on your grill for a crowd outside on the patio!

Apple Grilled Cheese Recipe

Ingredients

  • 8 slices bread (sourdough preferred)
  • 4 tablespoons butter
  • 2 tablespoons stone ground mustard
  • 1 tablespoon fig or apple jam
  • 8 slices sharp cheddar cheese, enough for 2 layers on 4 sandwiches
  • 2 apples, cored and thinly sliced
  • 8 slices thin bacon, cooked, optional

Directions
Butter each slice of bread on one side.

Combine mustard and jam. Spread on non-buttered sides of 4 slices of bread.
Top mustard spread with layer of cheese, apple slices, bacon and 2nd layer of cheese. Cover with second slice of bread, making sure buttered sides are facing out.

Grill sandwiches in preheated skillet (medium heat) or on griddle for about 2-3 minutes per side until golden brown and cheese has melted. Slice and serve while warm.
